Originally a harvest festival, the Jewish festival of Shavuot (6/8 – 6/10) also commemorates the giving of the Torah. It is customary to eat dairy foods on the holiday and often is celebrated with cheesecake. Our modern twist? We created a fruit compote based on the First Fruits from bikkurim, or the harvest festival. We then combine this with honey to honor the religious symbolism associated with the Torah and fold it into a whipped cream.
